Perfectly Pig-tastic at Pizza Antica
Monthly themed meals create community in Mill Valley
Looking to celebrate the culinary curiosity of their guests, Pizza Antica Mill Valley has introduced themed monthly dinners that highlight seasonal flavors, going well beyond everyday Italian.
For February, that focus was porchetta. A wildly decadent meal, this savory stone valley farm pork had spent the latter part of two days being prepared, herbed, rolled and roasted before being served to us on a bed of cranberry beans and rapini. Served up with coppa di testa nestled in argula and fennel, and finished with a winter citrus panna cotta, this three-course prix fixe meal left us supremely satiated.
But what left us smiling was the presentation. Instead of individual tables for each party, all of the guests were gathered together over communal tables, a very appropriate setting for a dish traditionally used for celebrations in Italy. Guided by Italian wine pairings, the evening grew more jovial as diners shared stories and memories along with their meal.
Topping off the night was a visit by executive chef Bradley Ceynowa, who created his own dinner theatre by revealing the extensive preparation of the pig, with photos to boot. The former sous chef at Michael Tusk's Cotogna is making his mark on all of the Pizza Antica locations, bringing his predilection for strong but simple rustic flavors to the dining table.
Next up on tap, Pizza Antica is partnering with Linden Street Brewery of Oakland to introduce Birra Antica, an Italian-style beer crafted specially for the eatery. Spiced with fennel, black pepper and cumin, this small-batch brew promises to be a strong complement to a sunny afternoon respite. On April 15, meet the brewer and taste a fresh-pressed beer and complimentary taralli (Italian for gourmet pretzels) as part of Pizza Antica's "Release Week." The brew and pretzel combo will be served for $6 April 15-21 at the Mill Valley location.
